The locally-owned Carolina Brewery has drawn international attention for its handcrafted beers, all brewed in-house by Director of Brewing Operations Jon Connolly and his team.  The brewing process—from cracking malted barley in a gristmill, to creating a mash of fermentable sugars, to boiling, adding hops for bitterness, flavor, and aroma, and adding yeast for fermentation—is all done on-site.  The beer is then aged and carbonated, and finally sent to the tap, or kegged to send to other bars, restaurants and special events.

Founded in Chapel Hill in 1995, Carolina Brewery is the oldest brewery in the Triangle area.  Its Flagship India Pale Ale won a Gold Medal in the 2006 Great American Beer Festival and its Copperline Amber Ale is a Gold Medal winner in the World Beer Championships.  Enjoy one of these great local beers, on tap at Panzanella.
